Yellow Confetti Rice Salad

Turmeric turns the rice bright yellow and, in concert with the cumin, gives it a slightly exotic taste.

    Ingredients

    • 1/2 cup Peas
      2 tblsp. thinly sliced Scallions
      2 tblsp. Lemon juice
      1 tsp. Salt
      1 cup Long-Grain Rice
      1/4 tsp. Ground Cumin
      1/2 tsp. Turmeric
      1 tblsp. Extra-virgin olive oil
      2 tblsp. finely chopped Red & green bell peppers

    Directions

    1. 1) In a wide sauce pan, heat the oil over low heat. Add the rice and stir to blend. Sprinkle with turmeric and cumin; stir to coat.

      2) Add the water and salt, heat to boiling. Stir once. Cover and cook over medium-low heat, without stirring; until the water is absorbed and the rice is tender, about 15 minutes.

      3) Let the rice stand, uncovered, until cooled, about 20 minutes. Do not stir.

      4) Meanwhile, make the dressing: whisk the oil and lemon juice together.

      5) Add the dressing, scallion, peas, green and red peppers to the cooled rice. Stir gently with a fork before serving.

      DRESSING INGREDIENTS:
      2 tblsp. Extra-Virgin Olive Oil
      2 tblsp. Fresh Lemon Juice
      2 tblsp. Scallions, green & white parts, thinly sliced
      1/2 cup Peas
      2 tblsp. EACH Green & Red Bell Peppers, finely chopped
