This is a special dish made with a red wine and shallot sauce.

    Ingredients

    • 2 lbs. oven Fries
      1 lb. Beef flank steak
      1/4 tsp. ground Black pepper
      2 tsp. Olive oil
      1 lg. minced Shallot
      1/2 cup dry White wine
      1/2 cup Chicken broth
      2 tblsp. fresh, chopped Parsley

    Directions

    1. 1) Prepare ***Oven Fries.(see directions below)

      2) Meanwhile, sprinkle steak on both sides with pepper. Heat nonstick 12-inch skillet over medium-high heat until hot. Add steak and cook about 14 minutes for medium-rare or until of desired doneness, turning once. Remove steak to cutting board, keep warm .

      3) To drippings in skillet, add olive oil, heat over medium heat until hot. Add shallot and cook 2 minutes or until golden, stirring occasionally. Increase heat to medium-high. Add red wine and chicken broth, heat to boiling. Cook 3 to 4 minutes. Stir in parsley.

      4) To serve, holding knife almost parallel to cutting surface, thinly slice steak. Spoon red-wine sauce over steak slices and serve with oven Fries.

      ***TO PREPARE OVEN FRIES: Preheat oven to 500 degrees F. Spray two 15 1/2" by 10 1/2" jelly-roll pans or 2 large cookie sheets with nonstick cooking spray. Scrub 4 medium unpeeled baking potatoes (2 pounds) well but do not peel. Cut each potato lengthwise in half. Holding each half flat side down, cut lengthwise into 1/4-inch-thick slices, then cut each slice lengthwise into 1/4-inch-wide sticks. Place potatoes in medium bowl and toss with 1/2 teaspoon salt and 1/4 teaspoon pepper. Divide potato sticks evenly between pans. Place pans on 2 oven racks and bake potatoes 20 to 25 minutes, until tender and lightly browned, turning potatoes once with pancake turner and rotating pans between upper and lower racks halfway through baking time.
