Chicken and Pasta Soup

This is quite a chunky soup. If you prefer a thinner style of soup, you can add more stock. This soup is best enjoyed immediately.

    • 3 oz. Mushrooms
      6 cups Chicken Broth
      6 oz. Spaghetti
      1 cup Basil Leaves
      2 tbsp. Olive Oil
      1 diced Onion
      2 fillets Chicken Breast


    1. 1) Finely dice the chicken breast fillets and roughly chop the mushrooms. Heat the oil in the pan and cook the onion until soft and golden. Add the chicken, mushrooms, spaghetti and chicken stock. Bring to a boil.

      2) Reduce the heat and simmer for 10 minutes. Stir in the fresh basil leaves. Season with salt and freshly ground black pepper to taste
