Asparagus Guacamole

    Ingredients

    • 1 tsp Ground Cumin
      2 tblsp Sliced Green Onion
      1 Med. Tomato seeded and chopped (about 1 cup)
      1 tblsp Lemon Juice
      2 tblsp Plain Nonfat Yogurt
      .75 cups Water
      1 Lb. Asparagus spears (cut into 1 inch lengths) about 2 cups
      1 clove Garlic (Minced)
      .50 tsp Dried Oregano
      .25 tsp Salt
      .25 tsp Cayenne Pepper

    Directions

    1. 1) Combine asparagus and water in a 2-Quart sauce pan. Bring to a boil over medium-high heat to medium-low heat.

      2) Simmer 8-110 minutes, or until asparagus is tender.

      3) Rinse with cold water; drain. Blot asparagus with paper towel to remove excess moisture.

      4) Combine asparagus, yogurt and lemon juice in a food processor or blender. Process until smooth.

      5) In a medium mixing bowl, combine asparagus mixture and remaining ingredients. Chill if desired.
      Serve with Raw Veggies or tortilla chips!
