Spicy Marinated Shrimp

Serve these delicious Shrimp with Yellow Confetti Rice or Sesame Brown Rice or over Cabbage Salad.

    Ingredients

    • For garnish wedges of Lemon or lime
      2 cloves crushed through a press Garlic
      1 tbsp. Extra virgin olive oil
      1/4 tsp. Salt
      1/2 tsp. flakes of Hot red pepper
      1 lb. (about 16) peeled & de-veined Jumbo shrimp
      1/8 tsp. freshly ground Black pepper
      1 tblsp. fresh finely chopped Parsley or Basil
      1 tsp. fresh, grated & peeled Ginger

    Directions

    1. 1) Combine the oil, garlic, red pepper flakes, ginger, salt and pepper on a large platter. Stir to blend. Add the shrimp, turning and patting with the marinade. Cover with plastic wrap and let stand at room temperature for 15 minutes. Or if there is time, refrigerate for up to 2 hours.

      2) Heat a large nonstick skillet over medium-high heat until hot enough to evaporate a drop of water upon contact. Add the shrimp, a few at a time and quickly sear on both sides, about 2 minutes per side, or until cooked through.

      3) Sprinkle with the chopped herb and serve, garnished with lemon or lime wedges.
