    • 2 Cans 15oz each Fat-Feee reduced-sodium Chicken Broth
      2 Lbs. Red Potatoes, diced divided
      2 oz. Canadian bacon, diced
      3 Leeks, chopped, divided
      1 tbsp Butter, divided
      1 Med. Onion, chopped
      2 tblsp Chopped Chives
      1 tsp Thyme


    1. 1) Place onions in large saucepot with butter, rinsed leeks and bacon: cook for 10 min., stirring.

      2) Add red potatoes, chicken broth and chives. Cover and simmer.

      3) In a blender Puree half the soup mixture and Pour back into sauce pot.

      4) Stir in thyme. Season soup with salt and pepper.
      Garnish if desired, with diced red peppers.
