Pecan Encrusted Ham

    Ingredients

    • .75 cup Brown Sugar
      2 tblsp All-purpose Flour
      1 cup Apple Juice or Cider
      .50 tsp Pepper
      .50 tsp Salt
      .25 tsp Ground Cardamom
      1 tsp Ground Cinnamon
      10 Lb. Fully Cooked Cured, Shank Half
      .75 Cup Pecan halves, Divided
      2 tblsp Dark Corn Syrup

    Directions

    1. 1) Heat oven to 350 degreese.

      2) Place scored ham on rack in roasting pan.

      3) Mix cinnamon, cardamon, salt & pepper together and rub on the ham. Add juice; cover with foil and roast for 3 hours or until temperature reaches 160 degreese.

      4) Mix sugar and flour. Chop 1/2 cup pecans: add to sugar mixture with remaining nuts.

      5) Brush ham with corn syrup; press nuts onto ham.

      6) Raise oven tempature to 425 degreese and bake for 20 minutes or until bubbly.
