Grandma's Best Pancakes

    Ingredients

    • 2 tsp Baking powder
      1 tsp Baking soda
      2 cups All purpose flour
      1 tsp Pure vanilla extract
      2 cups soured Milk
      2 extra large Eggs
      1 tsp Salt
      2 tblsp Sugar
      2 tblsp Veg or Canola oil

    Directions

    1. 1) If you don't have sour milk, mix 2 tbsp vinegar to 2 cups 2% milk. Let sit for 10 minutes.

      2) In a bowl, beat 2 eggs and sugar with mixer on medium speed until fluffy, add Vanilla. Gradually beat in soured milk.

      3) In a separate bowl sift flour, baking powder, baking soda, and salt.

      4) Gradually add dry ingredients to milk mixture, blending with each addition until mixture is smooth. Add oil and continue mixing for an additional minute.

      5) Heat a large skillet to medium heat and brush with butter or veg. oil. Ladel 1/4 cup mixture onto skillet. Will make about 4in round pancakes. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side.

      6) If you wish to add fruit or chips to the pancakes, wait until bubbles break the surface and sprinkle the chips or fruit over the surface. Flip with a spatula and cook for 1 minute more

      7) Serve with your favorite flavor syrup and enjoy!
