    Ingredients

    • 2 tbsp. Olive Oil
      1 large Onion, diced
      3 cloves Garlic, minced
      2.5 lbs. Potatoes, peeled and cut into 2-inch chunks
      28 oz. Chicken broth
      1 tsp. Salt
      1/4 tsp. Ground Black Pepper
      1 lb. Kale, coarse stems and veins removed, very thinly sliced

    Directions

    1. 1) In 5-quart Dutch oven, heat olive oil over medium heat. Add onion and garlic; cook until lightly browned, about 10 minutes.

      2) Add potatoes, broth, salt, pepper, and 3 cups water; heat to boiling over high heat. Reduce heat to low; cover and simmer until potatoes are fork-tender, about 20 minutes.

      3) With potato masher, mash potatoes in broth until potatoes are lumpy.

      4) Stir in kale; simmer, uncovered, until tender, about 5 to 8 minutes.
