Putting A Creative Spin on the Ice Cream Sandwich

Nothing satisfies on a hot summer night quite like an ice cream sandwich, but the typical ones from the store can sometimes seem quite vanilla.  For a change in pace, try making your own ice cream sandwich using other foods that you can easily find in your pantry.  There is no such thing as too much of a good thing, so experiment with your favorite flavor of ice cream and your favorite sweet foods to come up with a new culinary creation.  If you are looking for summer fun, this is also a great activity for kids to do, especially if you are looking for something creative for them to do during a sleepover or playdate.  Now, get your ice cream scoops ready, and get creative!

The Chipwich: An oldie-but-goodie – simply sandwich vanilla ice cream between two chocolate chip cookies.  For an even bigger treat, buy large cookies, such as those sold at Costco and BJs.  You can also try variations of the chipwich with your favorite kind of cookie, such as snickerdoodles or oatmeal raisin cookies.

The Fruit Sandwich: Get more vitamins into your ice cream sandwich and try putting ice cream between slices of fruit, such as pineapple rings.

The Waffle Sandwich:  This one is easy enough for the kids to make on their own: Take two waffles (frozen pre-made waffles are perfect for this), toast them to your liking, and sandwich your favorite ice cream in the middle.  Flavored waffles can make this even more special – try cinnamon, blueberry, strawberry, or even chocolate chip waffles!

The Doughnut Sandwich: If you aren’t counting calories, try this incredibly indulgent dessert.  Take a glazed doughnut and cut it in half, as though you were slicing a bagel. Then, put your favorite ice cream in the middle, and dig in!  You could even make it reminiscent of a morning wake-up and use coffee ice cream.

The S’more Sandwich:  Here is the perfect s’more for the rainy night when you can’t actually toast marshmallows.  Instead, put a few marshmallows on a plate and microwave them for about 15 seconds (they will expand, but make sure that they do not start crisping too much, as they burn quickly).  Take out the gooey marshmallows and mix them with vanilla ice cream (or any flavor, really).  Then, put the mixture on half of a graham cracker, put a piece of chocolate on top, and top if off with the other graham cracker half.  Voila!

The Brownie Sandwich: If you want to keep the outside of your ice cream sandwich chocolaty, smush some ice cream between two brownies.  If chocolate isn’t a necessity, blondies are also a great variation and will certainly leave your guests wanting more.

The Pop Tart Sandwich:  This may be a bit of a sugar overload, but it is certainly delicious.  Just sandwich your favorite ice cream between two of your favorite flavor Pop Tarts!

Mini Cookie Sandwiches:  For a bite-size treat, put your ice cream between two oreo cookies (just the cookie part, not the inside), or two Nilla wafers.
