Jim Slattery Joins Bullfish As New Head Chef

Written by Hank Russell  |  15. April 2011

SAYVILLE, NY - Bullfish has announced that Jim Slattery has joined the restaurant as its new Head Chef. He will be responsible for preparing the meals and introducing new dishes to the menu. Mr. Slattery grew up in East Williston. At age 14, he started working at neighborhood restaurants after school. When he was 18, he had the opportunity to work with Guy Peuch of Stonewalls in Riverhead. Mr. Peuch encouraged him to attend New York Restaurant School. As a student, he was given the opportunity to work at the Cumberland Hotel in London, England and to travel to different parts of Europe, where he tasted the local fare. His love and appreciation of European food lent to his knowledge of cuisine and his talents for combining unique creations of French, American and Italian dishes. Upon graduating in 1993, Mr. Slattery ran the line in a variety of kitchens in Long Island and New York City, including the Inn at Quogue, the Seafood Barge in Southold, Dodge City Steakhouse in Westhampton, La Plage in Wading River and Dublin Deck in Patchogue. He also had the distinct pleasure of working with two fellow Chefs on the East End: Robert Durkin of Robert's in Water Mill and Dennis MacNeil of Peconic Coast in East Hampton. Mr. Slattery currently resides in West Sayville. "I am pleased to be joining Bullfish," Mr. Slattery said. "The restaurant gives me the chance to prepare unique dishes that will satisfy their customers. I also like the fact that the restaurant makes its own sauces and creams from scratch and the food it serves is always fresh. The restaurant also offers healthy, high-quality menu items for its customers, which is another reason why I feel Bullfish is a good fit for me." "We welcome Jim as our new Head Chef," Said Carlo Bruno, Owner, Bullfish. "We are glad to have a head chef who has a vast knowledge of American and European cuisine and a background working with some of the best-known chefs on Long Island. We believe his talents and experience will enhance our already distinguished menu."
