Carle Place, NY - The season of Lent means for Christians the abstention of meat every Friday during those six weeks, but it should not mean eating pizza and tuna fish sandwiches. — BBQ Salmon Salad - barbecued pan-seared salmon medallions over mixed field greens with tomatoes, red onions and cucumbers in a mustard honey vinaigrette

— Grilled Vegetable Salad - smoked tofu, grilled squash, eggplant, tomatoes, mushrooms, onions and pepper jack cheese tossed over field greens and fried chick peas with balsamic vinaigrette
