Tuesday's Top 10: Celebrating National Soup Month

On a chilly day a steaming bowl of soup has the power to warm the heart, soothe the soul, and fortify the weary.  There is something special about soup.  January has been designated National Soup Month. Although this is an American holiday; this holiday celebrates all types of soups from around the globe.  Every country in the world has soup recipes and family traditions from long ago.

Traditionally, soups are classified into two broad groups: clear soups and thick soups. The established French classifications of clear soups are bouillon and consommé. Thick soups are classified depending upon the type of thickening agent used: purées are vegetable soups thickened with starch; bisques are made from puréed shellfish thickened with cream; cream soups are thickened with béchamel sauce; and veloutés are thickened with eggs, butter and cream. Other ingredients commonly used to thicken soups and broths include rice, flour, and grain.

There are many places to buy delicious soup locally.  Everywhere from the corner deli, diners, soup bars in grocery stores to gourmet restaurants.  It is always fun to try to spell words out in a bowl of alphabet soup.  Or consider taking a cooking class to learn how to make soup.
