Scrumptious Recipes for a Snowed In Sunday Brunch

Long Island has had more than its fair share of snowstorms this winter which means snow days spent at home with loved ones! Being snowed in isn’t all that bad when you have the right necessities to keep you busy and yummy food to keep your belly full.
 
Check out some of these delicious Sunday Brunch recipes perfect for a chilly snow day. We know the kids can be picky with certain foods at times, so we made sure to add in some kid-friendly recipes as well.
 
The Ideal French Toast
French toast is a breakfast favorite that the whole family will absolutely love! Try this delicious recipe and add a twist to this classic dish by topping it off with some berries, whipped cream or cinnamon sugar.
 
Ingredients:
  • 4 eggs
  • ½ cup of milk
  • ¼ cup of heavy cream
  • 1 teaspoon vanilla extract
  • Salt
  • 8 slices of bread
  • 3 tablespoons butter (plus some more for serving)
  • Toppings of your choice (powdered sugar, maple syrup, whipped cream, berries, cinnamon sugar)
Instructions:

1. Heat your oven to 200 degrees F and line a baking sheet with aluminum foil. Slide into oven.
2. Whisk cream, milk, eggs, vanilla extract and a pinch of salt together until blended well.

3. Line the bread slices up in a large baking dish. Pour the egg mixture over the slices of bread then move and flip them around so each slice is covered in the mixture. Continue until all soaked up.
4. In a large pan or griddle, melt a tablespoon of butter over medium-low heat.
5. Working in batches, transfer a few slices of the soaked bread to the pan and cook until they are golden brown (about 2-3 minutes on each side)
6. Once cooked, transfer the French toast to the warm oven while you cook the remaining bread slices. Add more butter as needed for each batch.
7. Once finished cooking, top with your favorite toppings and enjoy!

Hand Squeezed Orange Juice
Breakfast just isn’t the same without orange juice! Try something a little different by squeezing your own orange juice rather than drinking the store bought kind. This is something the kids can help with as well. Adults can also add some champagne for a morning mimosa!
 
Ingredients:
  • Fresh oranges
  • Sugar, to taste
  • A plain juicer if needed
  • Champagne for adult mimosas
Instructions:

1. Wash the oranges then cut them in half.
2. Remove the seeds if any.

3. Squeeze the orange into a cup or use a plain juicer if you have one to get all the juice out.
4. If you want to add pulp, scrape the orange with a spoon and add the pulp directly to the juice.
5. If you do not like the pulp, pour the juice through a strainer before drinking.
6. Add sugar for taste if needed.
7. For the adults: add champagne to your OJ for a delicious mimosa.
8. Serve chilled.

Baked Mini Quiches
Put a twist on your brunch by adding some delectable baked mini quiches. They are quite simple to make and you can add any type of filling you’d like! 
 
Ingredients:
  • Muffin tray
  • About 5-6 XL eggs (if smaller eggs, throw in an extra one)
  • 8 oz. of cheese
  • 1 cup milk
  • 1 medium yellow onion
  • 1 red pepper
  • 1 lb. bacon OR ½ lb. sausage (bacon will shrink, sausage will not)
  •  Any other filling of your choice
Instructions:

1. Preheat oven to 375 degrees F
2. Grease the inside of the muffin tins or use muffin/cupcake paper

3. Mix the eggs, cheese, milk, onion, pepper and your filling into a bowl.
4. Once mixed well, pour the mixture into the muffin tins
5. Place in oven at 375 degrees for about 30-45 minutes, depending on the filling
6. Let cool, then serve and indulge!

Scrambled Eggs & Oven Made Bacon

Can't forget the classic eggs and bacon dish to top off the perfect Sunday Brunch! This recipe includes oven cooked bacon, which makes clean up much easier!

Ingredients:
  • Eggs (amount depends on how many you want)
  • Splash of milk
  • Bacon strips
  • Cheese for taste
  • Aluminum Foil
  • 1-2 baking sheets
  • Paper towels
  • Platter
  • Tongs
Instructions:
 
Scrambled Eggs:

1. Mix eggs into a medium size bowl (1-2 eggs per person depending on how much you'd like)
2. Add a splash of milk

3. Wisk together and pour into a non-stick pan
4. Cook to your liking
5. Add any toppings of your choice (cheese, peppers, onions, salt, pepper, etc.)

Oven Made Bacon:

1. Preheat the oven to 400 degrees F. Place cooking rack inside if not already.
2. Arrange the bacon on a baking sheet. Make sure the sheet is lined with aluminum foil to help make clean up easier.

3. Lay the bacon on the sheet in a single layer, don't let them overlap one another.
4. Bake until the bacon is golden brown and crispy (15-20 minutes)
5. Let the bacon cool and use tongs to transfer it to a platter that has been lined with a paper towel.
6. Serve warm.

 
Once the cooking and preparing is complete, it’s time to enjoy your delightful brunch together. These recipes are great for any weekend and will surely be a hit with your whole family. The kids will be excited to know that they helped in the preparation as well!
